Get Ready for fall in good taste! It's pear season in Pennsylvania again and our guests return to the inn each September anticipating this delectable souffle. This sweet dish never disappoints and everyone checks out with the taste of fresh pear, cinnamon and nutmeg on their lips!

Ingredients:
- 14 slices of bread of choice
- 1/4 cup butter, softened
- 1/4 cup brown sugar
- 1 1/2 cups Half & Half or milf of choice
- 11 egas
- 1/4 cup maple syrup
- 1 Tbsp vanilla extract
- 1 tsp cinnamon
- 8 Tbsp ricotta cheese
- 1 cup fresh, frozen or canned pears
- Nutmeg
- Cinammon sugar
Steps:
- Pre-heat oven to 350 degrees.
- Spray a 9x13 rectangle baking dish with non-stick spray.
- Combine softened butter and brown sugar.
- Spread on bottom of oiled dish evenly.
- Cube 7 slices of bread and arrange loosely in the dish.
- Place 8 rounded Tbsp of ricotta cheese and spread evenly on top of the bread.
- Add 1 cup diced fresh, frozen or canned pears evenly over ricotta cheese.
- Cube 7 slices of bread and arrange loosely on top of the pears.
- Wisk together eggs, Half & Half or milk, maple syrup, vanilla extract and cinnamon. Pour evenly over the entire dish.
- Press down to help the bread soak up the egg mixture.
- Sprinkle with cinnamon sugar and nutmeg.
- Cover with foil.
- Bake for 30-35 minutes covered until it starts to puff, then remove the foil and bake for another 10-15 minutes.
- Makes 8 large servings.
